Ingredients:
1 medium Onion (chopped)
1 Clove garlic
8 medium size Zucchini sliced into 1 1/2 inch
1 Can veggie broth
2 1/2 cup Water
1 teaspoon Salt
1/4 cup Parsley
1 teaspoon Basil
1/8 teaspoon Black pepper
1/8 teaspoon Cayenne pepper
Directions:
Briefly fry-pan the onion and garlic in some oil.
Combine and mix the remaining ingredients in the pan.
Cook to boiling and then reduce heat to simmer. Continue heating for 15 minutes.
Place 2 cups of soup in blender at a time. Process the electric blender.
Serve soup with parmesan cheese or garnish.
